Calling All Vegtables = Come jump in my Greek Salad

I just chopped up a salad of all kinds of goodies from the garden and topped it off with homemade fresh, herbal Greek salad dressing that I made – it included Basil, yellow squash, zucchini, tomatoes, onions, garlic and much more are in the salad. The cool thing with a greek salad is that you kind of dump in a little bit of everything from your garden. Top it off with a bit of Feta cheese before serving and yummmmmmmm. All that fresh, raw food, just harvested………. life is good.

I took a Greek cooking class this winter that was offered through the extension service in Oregon. The owner of Alexander’s Greek Cuisine in Roseburg, Oregon taught us how to prepare several of his recipes. The most treasured for me is his Greek dressing. I will post it on the website when I can. It is easy, relatively simple and so delicious. Freshly grown herbs really set off the flavor of course.

That is one of the repeating themes you will see are methods and recipes for managing all the food that your garden can produce. I have developed some really great ways to enjoy and consume the tsunami of food that a healthy garden can pump out.

Welcome to a Green and Thriving World of Fantastic Food

I am so excited to keep this active posting about organic gardening. I started gardening as a young child. For our family gardening was not a hobby, it was a critical source of food. I developed a love and appreciation and yes, a passion for growing and eating the best food in the world – fresh in your own backyard. We were quite poor. The odd thing is that as finances improved in future years we ate more packaged store bought foods and our nutrition went down hill.  I have continued gardening on my own. I even gardened while going to the University. Since moving to Oregon in 1985, I have developed a really efficient and easy way to garden that has so many wonderful benefits. The best benefit in our busy modern life is that it does not need to take much time.

I hope you will subscribe or pass a link to this site along to someone who would enjoy raising some of their own food. I will have a suggestions for a simple one pot garden to a full blown back yard feast.

I am doing this work through a non-profit, foundation Conscious Living Foundation. The goal of the foundation is to foster greater harmony among nature, self and society. I can think of no better application of that then to grow sustainable, safe and highly nutritious food. I can imagine that this work in the future could reach around the planet to help others to easily grow delicious food.
